Lemon Roasted Chicken with Red Potatoes

Yet another recent creation cobbled together from various sources and my imagination. This was one of those “what do I have available and how can I make it tasty” kind of recipes. It’s nice and simple, except for the part where you have to baste or stir everything every 15 minutes or so to keep it from drying out as it cooks.


  • 1 1/2 lb Red potatoes, cut into 1″ squares
  • 2 Lemons
  • 2-3 chicken breasts
  • Herbs – oregano, basil, thyme, etc to taste
  • Salt
  • pepper



  1. Preheat oven to 375
  2. In a large bowl, mix the cubed red potatoes, herbs, and salt & pepper
  3. Slice the lemons in half, and juice them into the bowl
  4. Cut the lemon halves into quarters, then mix them into the potatoes and herbs
  5. Lightly oil a 9×13 baking dish
  6. Place the chicken in the baking dish and season with salt & pepper
  7. dump the potatoes and lemons into the baking dish with the chicken
  8. Bake at 375 for 1 hour, basting every 15 minutes (note – cooking time may vary by oven)
