The Laziest Cheddar Potatoes You’ll Ever Meet

I admit, I’m a lazy cook. I don’t like long prep times, involved processes, or too many ingredients. But I’m pretty sure I’ve hit an all-time low with these Cheddar “Mashed Potatoes.”

Dinner

Kayaking on the Clark Fork River

While walking through downtown Missoula this morning, I stopped at Brennan’s Wave, which is an artificially created wave on the Clark Fork River. It’s very popular with kayakers and body surfers, and luckily for me and my camera, there was a kayaker playing in the wave.

Scenic Trip

Taking the scenic route meant I ended up arriving in Missoula 2 hours later than planned on Wednesday night (and well after dark) but it resulted in some great pictures. Here are a few of my favorites:

A cool, geeky breeze
