Lemon Pepper Chicken
I have fond memories of frozen Lemon Pepper (fake) Chicken that used to be delivered by the Schwann’s people. Yesterday I was inspired to search the web for a recipe that would allow me to create something similar but better. After a few tries, I found a recipe that looked like it would produce something close to what I wanted, so I modified it to fit my tastes.
I have to admit, when I first started cooking, I was worried, because the sauce smelled quite unappetizing. However, the closer the chicken got to being done, the better it smelled, and in the end, I wound up with a dish that practically had me licking my plate when I was done.
Ingredients:
- • 1/2 cup butter
• 2 tablespoons fresh lemon juice, about 1 lemon
• 1 teaspoon salt
• 1 large clove garlic
• 1/8 teaspoon pepper
• Lemon Pepper Seasoning
• 2 to 3 chicken breasts
Preparation:
Coat chicken lightly in Lemon Pepper seasoning and let sit. Melt butter over medium low heat in a heavy skillet. Add lemon juice, salt, garlic, and pepper; bring to a boil. Add chicken; bring to a boil again. Reduce heat, cover, and simmer for about 30 to 40 minutes, turning frequently. Chicken should be tender and juices will be clear.
