Mom’s extremely addicting oven-baked red potatoes

My mom gave me this recipe today when I was talking about what to make for dinner, and that I was still looking for a good recipe for oven-baked red potatoes. These are pretty deceptive. At first when you start eating them, you’re like “oh, these aren’t bad” and then as you keep eating, they keep getting better, until you find yourself finishing off a pound of them because you can’t stop eating. Consider yourself warned.

2 lbs red potatoes, rinsed and cut into bite-sized pieces
2 tsp seasoning salt (Lawry’s or Johnny’s) add more to taste if necessary
2 Tbsp olive oil or melted margarine, or as much as needed to evenly coat potatoes

Preheat oven to 450 degrees
combine olive oil or margarine with seasoning salt and potatoes in a mixing bowl, mix until potatoes are evenly coated
line a baking pan with foil, or grease with olive oil or margarine
pour potatoes and olive oil/margarine mix into baking pan and spread into an even layer
Bake 40-45 minutes

You should probably stir the potatoes at 20 minutes to keep them from sticking, and check them at 30 minutes as they can sometimes cook quicker than expected.

    These are also good with “new” potatoes. Right now we have Yukon Golds and they are also great in this dish.
