Easy Beef Stew
A really easy beef stew, adapted from a pot roast recipe and meant to be cooked in a crock pot. This fills my 6qt crock pot, so if you have a 4qt you’ll probably need to cut the recipe in half.
3-4 lbs beef stew meat, cut into 1 in pieces (or pre-cut stew meat from your local grocer)
3-4 large potatoes, cut into 1 in pieces
1 package peeled baby carrots, rinsed and cut in half
2 cans beef broth
1 package dry onion soup mix (I use Lipton Beef flavored)
1 tsp garlic powder
2-4 cups water, enough to fill crock pot to 3/4 line
Chop stew meat, potatoes, and carrots. Place in crock pot, with garlic powder and onion soup mix. Pour beef broth and water over everything else and mix well. Cook on low 8-10 hours or high 3-6 hours until beef and potatoes are tender.
